With no added sugar and some protein from almond flour and Greek yogurt, these waffles are a healthier alternative to traditional recipes
A mixture of almond flour and whole wheat flour gives these waffles a delightful crispy texture and provides additional protein and fiber not found in traditional recipes. Top with a bit of whipped cream and some berries for a delicious breakfast treat.
- Level: Easy
- Total Time: 30-35 min
- Yield: 8, 4 in. x 4 in. waffle squares
Ingredients
- 1 cup almond flour
- ¼ cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- Pinch of salt
- ½ cup milk of your choice
- ½ cup Greek yogurt
- 2 eggs
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
Directions
- Preheat your waffle iron.
- In a medium bowl, whisk together the almond flour, whole wheat flour, baking powder, cinnamon, and salt. Make a well in the middle of the mixture.
- To the well, add the milk, yogurt, eggs, vegetable oil, and vanilla extract. Whisk until the dry and wet ingredients are well combined and a somewhat thin batter has formed.
- Grease the hot waffle iron with cooking spray or vegetable oil.
- Add the appropriate amount of batter to the waffle iron (this will depend on the size of your waffle iron).
- Cook the waffles until crispy and golden brown (for my waffle iron, it takes about 6 minutes).
- Repeat steps 5 and 6 until all batter has been used.
- Serve waffles with your favorite toppings.
Notes
Whipped cream and some berries make for a delicious topping that doesn’t pack in a lot of sugar.
